INGREDIENTS

2 tablespoons garlic, chopped

1⁄4 cup onion, chopped

1 cup fresh orange juice

1⁄4 cup fresh lime juice

1 small chipotle pepper, chopped (optional)

1⁄4 cup olive oil

2 teaspoons kosher salt

1 1⁄2 teaspoons black pepper

1 teaspoon ground cumin

1 teaspoon dried oregano

1 1⁄2 teaspoons fresh cilantro, chopped


DIRECTIONS

Mix together the garlic, onions, orange juice, and lime juice in a bowl.

Heat the olive oil in a large saucepan til just hot

CAUTION: slide the contents of the bowl into the hot oil — be very careful because the liquid could splatter. You might want to use oven mits.

Simmer for 5 minutes to soften the onions and garlic. Season the marinade with the rest of the ingredients.

CAUTION: Pour everything into a blender (remove lid for hot air to release) or food processor and pulse 3 times to blend (another alternative is to use an immersion blender). Whichever method you use, just use caution with the hot liquids.

Pour into a glass container and cool to room temperature; cover and refrigerate.

Mojito Marinade keeps for up to 2 weeks.

Oven Roasted Pork Loin Roast

 Ingredients

Olive oil spray and oil

½ tablespoon of any other salt

½ teaspoon black pepper

1 tablespoon garlic powder

1 tablespoon paprika regular or smoked

1 teaspoon dried sage

1 teaspoon dried thyme

3 pounds pork shoulder roast boneless


How to make it:

Line a rimmed baking sheet with foil and fit it with a wire rack. Spray the wire rack with olive oil.

In a small bowl, mix the kosher salt, black pepper, garlic powder, paprika, sage, and thyme. 

Pat the pork dry with paper towels. Place it on the wire rack. Rub the spice mixture all over the roast. Spray its top liberally with olive oil.

Heat the oven to 425°F. Let the roast sit at room temperature while the oven is warming, about 30 minutes. 

Insert a meat thermometer probe into the middle of the pork roast and place it in the hot oven. Roast it for 15 minutes, then lower the heat to 375°F and continue roasting until the meat thermometer reads 145°F. In my oven, it takes 75 minutes (about 25 minutes per pound). 

Remove the roast from the oven. Loosely tent it with foil and allow it to rest for 20 minutes. Carefully remove the butcher twine from the roast, slice, and serve.

What you need:

1 pound ground or chunked (cut up small bites)chicken or pork

2 Tablespoons cooking oil

3 cloves (3 cloves) garlic , minced or crushed

1 teaspoon freshly grated ginger root , optional

1 Tablespoon soy sauce (or fish sauce for more flavor)

1/2 teaspoon sesame seed oil

1/2 teaspoon kosher salt , or to taste

freshly grated black pepper

1 stalk celery (with the top) Chopped small

1 cup cabbage , shredded thin

1/2 cup grated carrot , (about 1 medium carrot)

3 green onions , small chopped

1 large egg


1 package (1 package) egg roll wrappers or spring roll wrappers in the freezer or fresh section of market.

vegetable oil , for frying


HOISIN-PEANUT DIP

1/2 cup hoisin

1/4 cup peanut butter

1 tsp brown sugar (optional)

chili hot sauce or Sriracha Sauce (optional)

1/2 teaspoon sesame oil , or to taste

2 teaspoons vinegar , or to taste

about 1/2 cup water , or to preferred dip consistency

How to make it:

MAKE EGG ROLL FILLING

Heat a skillet over medium-high heat. Add the oil and then add the garlic and optional ginger. Cook for about 1 minute or until lightly browned. Add the ground chicken, soy sauce, sesame seed oil, salt and pepper. Cook for 2-3 minutes or until the chicken is lightly browned.

Add the cabbage, carrots, and green onions. Cook for another 1-2 minutes or until the vegetables soften. Stir in the egg and cook for another 30 seconds. Remove from heat, place the cooked filling in a colander to drain excess juices and allow to cool. 

MAKE THE HOISIN-PEANUT DIP

While the chicken filling is cooling, make the dip. In bowl, combine all ingredients (hoisin, peanut butter, hot sauce, sesame oil, water, and rice vinegar) and whisk together. If you are making a very large batch, you can use a blender by blending all the ingredients together. But make sure you add enough water because some brands of hoisin are very thick.

Prepare eggrolls for cooking

Using egg roll wrappers or spring roll wrappers, add about 3-4 Tablespoons of chicken filling to each wrapper (depending on the size of the wrapper) Tuck and roll the wrapper around the filling.

Brush the top corner of the wrapper with water or beaten egg to help seal the wrapper end, and then finish rolling the egg roll. Repeat for all the egg rolls.

Fill large frying pan with about 1/2 inch of vegetable oil. Heat to about 350°F.

Slowly add rolls to frying pan, but do not crowd them because they will stick together if placed too close. Fry each side of egg roll for about 3 minutes or until all sides are crisp and brown.

Blot on paper towel to remove excess oil. Serve warm with hoisin-peanut dip. You can also wrap these chicken vegetable egg rolls in lettuce and eat them as lettuce egg roll wraps!

Dr. Pepper Slow Cooker Pork Chops

Although I don't drink it everyday, nor any soda I do like it the best of all sodas and it works so well in recipes that I usually have some around. Busy Day? Most of the days are for all of us, these Dr. Pepper slow cooker pork chops are the perfect recipe for busy nights. Three ingredients, prep only takes minutes. Let's get to making them.

What you need:  

1 lb Boneless Pork Chops
1 can  Dr.Pepper Room Temperature
A good shake of the following spices: garlic powder, onion powder, sea salt, cracked pepper, smoked paprika
Olive oil spray
Barbecue sauce


How to make them:

Spray the crockpot with olive oil lightly and season your chops with the seasonings listed, you may use any others that you like on your pork.

Place the pork chops in a crock pot and cover with a can of Dr. Pepper.

Cook on high for 3 hours.

Remove the pork chops and drain any remaining liquid.

Generously cover pork chops in barbecue sauce and place back in crockpot. Cook for an additional 30 minutes before serving.

What you need:

4 boneless pork chops
seasonings: salt, pepper, garlic powder, (a little ranch seasoning mix works great too)_I make my own
1/2 cup of sour cream
small can of French fried onions

How to  make it:

I used the thin sliced boneless pork chops (season with salt, pepper, garlic powder)

Lay them in a single layer in the bottom of a 9x13 Pan

Preheat oven to 350

Cover with a layer of sour cream

Top with the French fried onions (I used the whole can)

Cover and bake for about 35 min

Something magical happens and these are so tender and good!

Add your favorite sides, garlic bread

Pork Tacos with Sweet Chili Slaw

INGREDIENTS

4 pounds pork roast
1/2 teaspoon cumin and chili powder
red onion, sliced thin
1 teaspoon salt
2 teaspoon pepper
1 teaspoon smoked paprika
1 teaspoon onion powder
1/2 teaspoon garlic powder
2 tablespoons olive oil
8 ounces beer and 8 ounces chicken broth
2 cups sliced green cabbage
3 tablespoons sweet chili sauce
1 lime juiced
a bunch of (4-inch) tortillas, for serving (I used white corn tonight)
shredded cheese, for topping
cilantro avocado cream
1 avocado, chopped
1 lime, juiced + zested
3 tablespoons sour cream or greek yogurt
3 tablespoons chopped fresh cilantro

INSTRUCTIONS 
Rub the pork with a little olive oil,  then sprinkle pork with the salt, pepper, paprika, onion powder and garlic powder, cumin, chili powder. Pour your favorite beer  and chicken broth in the pot, around the sides, not rinsing off the spices, cover and cook for 5-6 hours on high. Check with meat thermometer if it's 165 you can slice it and serve like I did, or if you want it pulled into pieces let cook a little more. After 7 hours, remove the top and pull the pork apart with tongs or forks. I toss it well with the beer and then cover it and let it cook for another 15 minutes or so. Mix well to combine everything. Taste the pork and season it additionally if desired.
To make the slaw, add the cabbage to a large bowl. Toss it with the sweet chili sauce and the lime juice, adding in a pinch of salt. You can make this a few hours ahead of time and keep it in the fridge if desired.
To make the avocado cream, add the avocado, lime juice and zest, sour cream or yogurt and the cilantro to a food processor. Blend until pureed and creamy.
Assemble the tacos by adding some pork to each tortilla and covering it with a drizzle of the avocado cream. Add the slaw on top and crumble on a bit of cheese.

Air Fryer Breaded Pork Tenderloin Sandwich

I lived in Iowa for several years as a kid and young adult – a breaded pork tenderloin sandwich is near and dear to my heart but I just can’t find a good one here in Oklahoma. So – I decided to get in the kitchen and made my own! The best part is you can make big sandwiches with them or slice them up and make tenders or sliders! I bet once you try these you'll like them too


WHAT YOU NEED:

4 pork tenderloins or boneless pork chops(pounded with a meat mallet)
1/2-1 cup all-purpose flour
2 large eggs lightly beaten
1 cup Panko bread crumbs
salt, pepper(I use coarse)
garlic powder, dash of cayenne(optional)
olive oil spray


HOW TO MAKE IT:

Place one pork chop in a ziploc bag and pound them until just 1/4-inch thick – using the flat side of a meat tenderizer.

Get two plates and a bowl. In one plate, pour flour. In bowl, whisk together eggs, salt & pepper. In the last plate, place the bread crumbs and stir in salt & pepper.

For full size sandwich – Take one flattened chop and dredge both sides in flour, then egg, then bread crumbs. For tenders – slice flattened chop into 3-4 slices and dredge as noted.

Gently place pork into air fryer. Spritz with olive oil spray.

For full size sandwich – air fry at 400 degrees for 7 minutes. Open air fryer, flip, spray and air fry for 7 minutes more. I did 12 on each side as my air fryer is also my oven, so it's bigger and takes longer to cook. You may need to cook longer, different air fryers heat differently I find mine needs longer. For tenders – air fry at 400 for 4 minutes or longer per side – spraying each side with olive oil spray. Transfer to a plate and repeat the process until all pieces of pork are fried.

For full size sandwich – serve on bun and top with mayo, mustard, ketchup, onions and pickles. For tenders – dip in your favorite sauce! (Honey Mustard, Ranch or Fry Sauce!)

Instant Pot Smothered Pork Chops and Potatoes

 


Instant Pot Smothered Pork Chops and Potatoes in a creamy mushroom gravy is oh so good, makes coming home easy to get dinner served and so delicious. #instantpot #porkchops


What you need:

1.5 lbs. small or new potatoes sliced thin
1 onion, diced
salt and pepper, to taste
2 tsp garlic powder, divided use
1 (14 oz.) can chicken or any broth, low sodium
½ cup water
1 (10.75 oz.) can cream of mushroom soup
1 packet dry onion soup mix
2 tbsp. A1 steak sauce
4 bone-in thick cut pork chops
1 (8 oz.) container sour cream
To thicken gravy
3 tbsp. cornstarch
3 tbsp. water

 

How to make it:

Slice potatoes and dice onion. Place potatoes and diced onion into a steamer basket (that safely fits inside your Instant Pot.)

Season potatoes and onions with salt, pepper, garlic powder and gently toss to season evenly.

In the insert of a 6-quart Instant Pot, stir together broth, water, cream of mushroom soup, dry onion soup mix and steak sauce.

Season both sides of the pork chops with garlic powder and black pepper. Place pork chops into the gravy mixture (make sure they get coated with the gravy.)

Place steamer basket (with potatoes and onions) on top of pork chops.

Put the lid on the Instant Pot and set the pressure release valve to "sealing." Set on high pressure for 10 minutes.

When finished, carefully do a quick pressure release.

Remove steamer basket and set aside. Then remove pork chops and set aside.

Turn the Instant Pot to the sauté setting. Stir in sour cream (if using.)

To thicken gravy:

Stir together water and cornstarch in a small bowl and add to gravy. Whisk the mixture and allow to come to a gentle boil until gravy thickens.

Serve gravy over pork chops along with a side of potatoes.

Pork Chops in Mushroom Gravy


There are no canned soups in this masterpiece. This is my Grandma's recipe so delicious

Makes: 6 servings 


Ingredients
1 tablespoon butter
1 clove garlic, pressed
6 pork chops
salt and pepper to taste
1 (8 ounce) fresh mushrooms, sliced
1 cup dry sherry or beef broth
1 (10.5 ounce) can beef broth
2 tablespoons cornstarch
2 tablespoons water

Directions 

Melt the butter in a large skillet over medium heat. Add garlic, and saute until fragrant. Season pork chops with salt and pepper, then cook them in the skillet just until browned on both sides, about 3 minutes per side. Remove the pork chops to a plate

Place the mushrooms into the skillet with the pork drippings and garlic, and stir in the sherry and beef broth, scraping any bits of pork that are stuck to the pan. Bring to a boil, then add the pork chops in the pan. Cover with a lid, and simmer slowly for about 10  minutes

Stir together the cornstarch and water. Bring the juices in the pan to a boil, slowly stir in the cornstarch mixture and cook until thickened, about 2 minutes. Spoon mushroom gravy over the chops, and serve.

Seasoned with oregano, cumin, chili powder, lime juice, these Mexican Slow Cooker Pork Carnitas Tacos are the perfect meal for any night of the week.  These are gluten free, dairy free, paleo, healthy foods

This easy carnitas recipe can be made in the slow cooker or Instant Pot for foolproof Mexican pulled pork that's juicy and flavorful. Perfect for tacos, tostadas, gorditas, burrito bowls and more! (gluten free, paleo, low carb)

10 servings

What you will need:

FOR THE CARNITAS

2 1/2 pounds pork shoulder (also known as ‘pork butt’)
1 small onion sliced or diced
4-5 garlic cloves minced
1 tablespoon lime juice
2 teaspoons coarse sea salt
2 teaspoons ground cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon onion powder
1/2 teaspoon ground black pepper
1 cup broth (chicken, beef or vegetable) *for Instant Pot cooking method only*

How to make it:

SLOW COOKER INSTRUCTIONS

Lightly spray crock pot with Olive Oil. Cut the pork shoulder into large 4-inch chunks. Place in the crock pot. Toss in your onions and garlic cloves minced.


Mix spices salt, ground cumin, chili powder, garlic powder, dried oregano, onion powder and black pepper. Mix thoroughly to coat the meat with all the seasonings.

Cover and cook on high for 4 hours, or on low for 7-8 hours. When tender, shred the meat by pulling it apart with two forks. Sprinkle with Lime.

Mix in freshly chopped cilantro if desired and serve in tacos, gorditas, tostadas, burrito bowls and salads.

INSTANT POT INSTRUCTIONS

Cut the pork shoulder into large 4-inch chunks. Add onions, and garlic minced to pot. Place in the Instant Pot.

Mix spices salt, ground cumin, chili powder, garlic powder, dried oregano, onion powder, black pepper and 1 cup of broth. Mix thoroughly to coat the meat with all the seasonings.

Lock the lid and set the steam release vent to the "sealing" position. Press the "manual" button and set the timer on high pressure for 40 minutes.


When the 40 minutes are up, let the pressure naturally release for 15 minutes. Then manually release the remaining pressure by moving the steam release vent to the "venting" position.

Open the lid and shred the meat with two forks. Mix in freshly chopped cilantro if desired add lime juice and serve in tacos, gorditas, tostadas, burrito bowls and salads.

Served with cabbage, onions, sour cream cilantro sauce, cilantro and limes

TIPS:

Feeding a lot you can double the recipe, I would double everything except salt, you can add more salt after cooking if you really need to.

To make this with pork loin, I recommend adding 2 tablespoons of cooking fat, either olive oil, coconut oil, canola oil or whatever you prefer. Since pork loin is a much leaner cut than pork shoulder, I’d also add 1/4 cup of liquid – either broth or orange juice. The meat won’t be as juicy as if you were using pork shoulder, but it’ll still taste great!

To freeze, cool the carnitas in the fridge. Place it in an air-tight freezer bag, leaving about 2 inches of room at the top to allow for expansion, and freeze. It can be kept frozen for 4-6 months. To reheat, heat it up in medium pot on the stove or a large bowl in the microwave.

Simple BBQ Ribs



Country-style ribs are cut from the loin, one of the leanest areas of pork. These ribs are seasoned, boiled until tender, then baked with your favorite barbeque sauce. That's it! Easy and tastes so delicious

Ingredients
2 1/2 pounds country style pork ribs or cut up beef ribs
1 teaspoon ground black pepper
2 teaspoon salt
garlic powder, onion powder, paprika, chili powder, mix to your liking
1-2 cups barbeque sauce

Directions

Place ribs in a large pot with enough water to cover. Season with spice mixture, black pepper and salt. Bring water to a boil, and cook ribs until tender. 

Preheat oven to 325 degrees F (165 degrees C). 

Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).

Honey Garlic Butter Pork Loin Roast

 


Delicious pork, juicy and really tasty full of flavor and best of all you can cook in crockpot or oven roasted Serve with your favorite sides, or a salad.


INGREDIENTS
PORK LOIN:
4-5 pound pork loin roast, trimmed of skin and fat
1 1/2 tablespoons olive oil, divided
RUB:
2 teaspoons paprika (mild or smoked)
1 teaspoon brown sugar
1 teaspoon each garlic powder and onion powder
1/2-1 teaspoon red chili powder, (optional)
2 teaspoons coarse salt
1/2 teaspoon black cracked pepper
HONEY GARLIC BUTTER SAUCE:
1/2 cup (6-oz) honey
1/2 cup (4-oz) unsalted butter
6-8 cloves garlic, finely chopped or minced
3 tablespoons low sodium soy sauce
2 tablespoons rice wine vinegar, (or cider vinegar)
Good pinch of salt
1/2 teaspoon cracked black pepper
ADDITIONAL:
1/2 cup broth, beef or chicken
1/2 cup water
4 teaspoons cornstarch


How to make it:

PORK LOIN:

Pat dry pork with paper towel. Combine 1 tablespoon of oil with rub ingredients. Season pork, rubbing the mixture into the meat.

Heat remaining oil (about 2 teaspoons) in a large pan or skillet over medium heat. Sear pork all over until golden browned, rotating the pork around to avoid spices burning.

SAUCE:

Melt butter in the same pan the pork was in while scraping up any leftover bits in the pan. Add garlic and sauté for 1 minute until fragrant. Stir in remaining sauce ingredients; bring to a rapid simmer for 1 minute.


SLOW COOK:

Place seared pork in a 6-qt slow cooker. Pour sauce over pork; cover with lid and cook on LOW heat setting for 4 - 5 hours.

Transfer pork onto serving dish and tent loosely with foil. Let rest for 10-15 minutes.

While pork is resting: pour juices from the slow cooker bowl into a pot large enough to fit the liquid. Bring to a simmer over medium-high heat.

Mix 2 tablespoons of the juices with 4 teaspoons of cornstarch. Whisk cornstarch slurry into sauce and let simmer for a good 5 minutes, or until thickened into a syrup-like consistency.

(For a thicker sauce, repeat this step with 1 teaspoon cornstarch mixed with 2 teaspoons water. Add into sauce and cook until thickened (please note: sauce will thicken as it cools). Continue this step until reaching your desired consistency.)

Slice pork and serve drizzled with Honey Garlic Butter Sauce.


OVEN ROAST:

Preheat oven to 350°F (175°C).

Place seared/browned seasoned pork in a roasting pan.

Prepare sauce, as above. Reserve 1/2 cup sauce for basting. Pour remaining sauce over pork.

Add in 1/2 cup stock and 1/2 cup water around the pork.

Cover and roast for 20 minutes. Baste with half of the reserved sauce and continue roasting, uncovered, for a further 15 minutes.

Baste again and roast for a further 10-15 minutes, until a meat thermometer registers 145°F (62.5°C) in the thickest part

(If pan dries out while cooking (it shouldn't), add a little more water.)

Transfer pork onto serving plate and baste with pan juices. Tent loosely with foil and let rest for 10-15 minutes..

Scrape up any browned bits leftover in the pan, mixing them through the pan juices and pour juices into a pot. Whisk in cornstarch/stock and water mixture and bring to a simmer. Slowly add in 1/4 cup water, whisk, then add a little more if needed up to 1/4 cup, until reaching a honey-like consistency. ( sauce will thicken as it cools).

Slice pork and drizzle with Honey Garlic Butter Sauce.


NOTES

Use skinless, boneless pork, trimmed of excess fat to avoid fat melting into our braising liquid/sauce.

Instant Pot BBQ Ribs



These are fall off the bone delicious and juicy tender good, made in no time at all.

Ingredients
8 servings
Ingredient 
½ cup brown sugar
¼ cup chili powder
1 tablespoon dried parsley
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons ground black pepper
2 teaspoons ground cumin
2 teaspoons onion powder
1 teaspoon smoked paprika
2 racks baby back ribs, membranes removed
1 cup water
½ cup apple cider vinegar
1 (12 ounce) bottle barbeque sauce (your favorite)

Directions

Mix brown sugar, chili powder, parsley, salt, garlic powder, black pepper, cumin, onion powder, and paprika in a bowl using a fork, breaking up any large clumps. Rub spice mixture over both sides of the ribs.

Place a steam rack inside a multi-functional pressure cooker (such as Instant Pot®). Pour water and cider vinegar into the bottom of the pot. Lower ribs into the pot by curving them around the edge. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.

Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.

Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; place ribs on the foil. Top with barbeque sauce.

Or you can finish them on the grill if you prefer too.

Broil ribs until sauce is bubbling, about 3 minutes.

Small to medium ribs are best for this recipe.

Slow Cooker Pork roast with pineapple and cranberries



This pork roast can be prepared in just a few minutes. Put all the ingredients together, and in hours you will have a delicious, moist, and tasty roast! Bam you have a dinner that everyone will love, I bet it will become a favorite.

Ingredients
1 (3 pound) boneless pork roast
Olive oil to rub down the roast
2 teaspoons seasoned salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1 (20 ounce) can pineapple chunks, undrained
1 1/2 cups chopped dried cranberries
1 1/2 cups chicken or beef broth or vegetable

Directions
Rub the pork roast on all sides with olive oil then spread with a mixture of salt and pepper, garlic powder, onion powder, paprika and place in a skillet, brown quickly on all sides and place in crockpot this will help keep it juicy but isn't a must do, I do it when I have the few minutes extra time.. Pour in the chicken broth,  pineapple chunks and juice, and sprinkle in the cranberries.
Cover, and cook 7 hours on Low.

CrockPot Pork Chops and Sauerkraut and Apples



This is actually a German recipe, made with pork chops, sauerkraut and apples put together quickly in the crock pot and let it cook about 5-6 hours on high and dinner is ready.

Ingredients
 8 servings
 8 center cut pork chops
 2 pounds sauerkraut, drained
 2 cups chicken broth
 1 large red apple, diced
 1 onion, chopped
 1 cup brown sugar
 1 tablespoon caraway seeds

Directions


Mix the sauerkraut, broth, apple, onion, brown sugar, and caraway seeds in a bowl until well combined, divide in half, spread half in a pam sprayed crock pot then place pork chops on top and spread the remaining sauerkraut mixture over the pork chops. Cover and cook on high 5-6 hours, stir a few times gently turn the pork chops once. Pork c.ops will be tender and tasty,

Pork Chops with Pepper Pan Gravy

ingredients
2 tablespoons olive oil
4 pork chops (bone-in, 1-inch thick)
1/2 cup all-purpose flour (plus 3 tablespoons)
1/2 teaspoon paprika
2 tablespoons unsalted butter
2 cups low-sodium chicken stock
1 small bundle thyme
1 bay leaf
1/4 teaspoon cayenne pepper
2 teaspoons hot sauce
2 jalapenos or fresnos (thinly sliced)
1 large red pepper sliced in thin strips
kosher salt and freshly ground black pepper (to taste)
step-by-step directions
Place a large sauté pan over medium-high heat and add 2 tablespoons of olive oil.
Season the pork chops on both sides with salt and pepper.
In a baking dish, add ½ cup flour and paprika, season with salt and pepper, and whisk to combine. Dredge the pork chops in the flour, shaking off any excess. To the preheated pan, add the dredged pork. Cook until a golden brown, about 5 minutes. Flip the chops, reduce the heat to medium and continue to cook until golden on the other side, 5 minutes. Remove to a platter to rest and tent with aluminum foil.
Drain excess oil from the pan and wipe clean. Place pan over medium-high heat and add the butter. To the melted butter, add 3 tablespoons of flour, and whisk to combine. Cook the roux for a minute then whisk in the stock. Bring to a gentle boil then reduce to a simmer. Tie the thyme and bay leaf together with a piece of butchers twine then drop it in to the gravy. Add the cayenne, hot sauce and chiles, red peppers, and whisk to combine. Simmer, stirring occasionally for 15 minutes. Season with ¾ teaspoon of salt and ¾ teaspoon of freshly ground black pepper. Add any drippings from the pork. Remove the herb bundle. Set aside and keep warm.
Serve the chops with the gravy spooned over the top.

Stuffed Pork Chops


Quick easy and so tasty Stuffed Pork Chops make a great meal

Ingredients
4 thick cut pork chops
1 cup dry bread crumbs
1/2 teaspoon ground black pepper
1/2 teaspoon salt
dash of ground garlic powder
5 tablespoons melted butter, divided
1 small yellow onion, chopped
2 tablespoons dried parsley
1 can corn, drained
1 cup chicken or vegetable broth
1 tsp ground sage or 4 fresh sage leaves

Directions
**If using fresh sage leaves, brown them in the butter first then add other ingredients to make this.
Make slits in pork chops to form a pocket in fat end. Combine bread crumbs, pepper, salt, garlic powder and ground sage (if using) 3 tablespoons of the melted butter, onions, and parsley; mix well. Stuff chops generously and skewer shut with toothpicks.
Heat the remaining 2 tablespoons of melted butter in a skillet. Brown chops and fresh sage in butter slowly over medium heat for 5 minutes on each side. Add broth and simmer over low heat for 10 minutes until tender, turning chops at least once. Then add remaining stuffing mix and bake 30 minutes at 350 degrees. Remove toothpicks and pour pan juices over pork chops before serving. These are delicious
Note I use 2 pork chops but the same amount of ingredients for Stuffing here because that's all I needed tonight

Smoked Pork Chops Ribs or Chicken Breast with Apple and Onion Compote


Smoking foods can be easy and tasty. Here is my recipe for pork chops,
ribs or chicken using Applewood,seasonings and slow cooking to perfection.
 Then top it with Apple Onion Compote and you have people wanting this often.

Preparation Time: 80 Minutes • Cooking Time: 4 hours • Servings: 4

Ingredients:
4 boneless pork chops
½ cup of BBQ Rub (recipe below)
2 tablespoons canola oil
2 tablespoons water
2 Spanish onions
2 apples, Granny Smith
2 tablespoons butter
¼ teaspoon cinnamon
½ teaspoon dry mustard
⅓ teaspoon nutmeg
Salt and pepper, to taste

Directions: Preheat the electric smoker and place apple wood chips in the smoke box. Let it heat for about 50 minutes. Meanwhile, season the pork chops, ribs or chicken with the BBQ rub. Then place the meat or chicken on a baking sheet. Then, covered it with the aluminum foil. Set the temperature of the preheated smoker to 225 degrees F. Insert the digital thermometer in the thickest part of the pork chop. Set the internal temperate to 200 degrees F. Place baking sheet with the chop into the smoker. Smoke the chops for about 4 hours.
Meanwhile, make the compote by adding oil to the skillet and heat it over the low flame. Now add onion and cook until soft. It took about 15 minutes at low heat. Take out the onion and add apples with water, and cook until turn golden. Melt the butter in the same pan and add cinnamon, dry mustard, and nutmeg. Add onions back to the pan and mix well. Season it with salt and pepper. Once chops are cooked, serve it with prepared compote

BBQ Rub recipe:
This is a good All Purpose Rub I make
All-purpose Spice Rub

3/4 cup paprika
1/4 cup ground black pepper
1/4 cup salt
1/4 cup granulated sugar
2 tablespoons chili powder
2 tablespoons garlic powder
2 tablespoons onion powder
2 teaspoons cayenne

Mix the spices thoroughly in a bowl. Store covered in a cool, dark
pantry.
Makes about 2 cups.

Pork Chops with Honey Herbs in Applesauce



Pork and apple are a match and this recipe uses those ingredients just right. Use fresh herbs or 1/2 the amount of dried. This makes a great entree with a salad

Serves: 4

Ingredients
For the Chunky Apple and Herb Sauce with Balsamic Vinegar:
1 tablespoon olive oil (EVO)
2 large shallots or 1 medium red onion, finely chopped
1 large clove garlic, chopped
Salt and pepper
2 tablespoons thyme, chopped
1 tablespoon rosemary, finely chopped
3 apples, peeled and diced ½ inch, such as Honeycrisp or Gala
½ lemon, juiced
½ cup apple cider
1 tablespoon honey
2 tablespoons aged balsamic vinegar
3 tablespoon grainy Dijon mustard


For the Pork Chops:
4 large boneless pork chops, about 1 ½-inches thick
Salt and pepper
2 tablespoons olive oil
½ cup Marsala or chicken broth
½ cup apple cider
2 tablespoons butter

How to make it:
For the applesauce, heat a saucepan over medium to medium-high heat with
EVO, 1 turn of the pan, add the shallots or onion, garlic, salt,
pepper and herbs and cook 5 minutes to soften. Add apples, lemon juice, apple
cider, honey and vinegar and cook about 12 minutes for apples to soften and
chunky sauce to form, stirring occasionally. Add mustard to serve

For the pork chops, heat a cast-iron skillet over medium-high heat while you
pat chops dry and season with salt and pepper. Add olive oil, 2 turns of the
pan and cook chops about 10 minutes, turning occasionally. Brown the edges on
chops and let rest on a platter covered with foil. Add Marsala to the pan and
whisk up the fond or drippings. Add cider to the pan and reduce liquids by
half, then add butter and swirl a minute or so more. Spoon sauce over the
chops and top with the applesauce.

Instant Pot Pork Tamales

Making classic Mexican tamales can be an all-day project. The Instant Pot

cuts the timing in half from the process of cooking the meat quickly

and in the same pot that steams the finished tamales.

*For best flavor season the meat ahead of time, up to a day ahead.

**Also Soak your husks in water up to 2 hours ahead of wrapping the tamales

for cooking.



 Servings

about 30-32 tamales



INGREDIENTS

1 1/2 pound pork shoulder boneless, cut into 4-inch cubes

sea salt

pepper freshly ground

2 tablespoons canola oil

1 yellow onion diced

2-3 tbs taco seasoning(I make mine)

garlic powder and onion powder to taste

1/2 cup chicken broth

4 ounces green chiles diced

1 poblano pepper diced

1/4 cup fresh cilantro leaves finely chopped

Olive oil

For Masa:

4 cups corn masa mix masa harina for tamales

2 teaspoons salt

1 1/2 teaspoons baking powder

4 cups Water or broth(I like to use broth)

2/3 cup solid vegetable shortening room temperature

32-36 in large corn husks soaked (put 3-4 on bottom rack of Instant Pot)

water to cover for 1 hour



INSTRUCTIONS



First a day ahead is best or at least 2 hours ahead take your meat and rub it down with Olive Oil then rub the Taco seasoning, salt and pepper over all the mat on all sides. I add a little garlic and onion powder too. Set in refrigerator covered.

When you are ready to cook your pork bring it to room temp at least 30 minutes before cooking. Select Sauté on the Instant

Pot and warm the Olive oil. In batches, sear the pork until browned on all sides,

about 8 minutes total. Using tongs or a slotted spoon, transfer the pork to a

plate.

Add the onions and poblano pepper to the pot and cook, stirring occasionally, until tender and

translucent, about 3 minutes.

Stir in a dash of salt and garlic powder, return the pork to the pot, add the

broth and chiles, and give everything a good stir.

Lock the lid in place and turn the valve to Sealing. Press the Keep

Warm/Cancel button to reset the program, then press the Manual/Pressure Cook

button and set the cook time for 1 hour at high pressure.

Let the steam release naturally for about 10 minutes, then turn the valve to

Venting to release any residual steam.

Carefully remove the lid and, using a slotted spoon, transfer the pork

mixture to a bowl. Using 2 forks, shred the pork leave the onions and peppers

in with the meat.

Add the cilantro, stir well and let cool to room

temperature. Using pot holders, lift out the inner pot, rinse well, and

return the inner pot to the Instant Pot housing.



In a large bowl, mix the corn masa mix, salt, and baking powder, then stir in

3 cups of broth or water until blended.

Stir in the vegetable shortening, then knead the masa against the side of the

bowl until incorporated.



**Remove the husks from the water and pat dry. Place the husks on a work

surface with the narrow ends facing you.

One at a time, spread about 3 tablespoons of the masa mixture onto the widest

part of a husk and top the masa with about 1 tablespoon of the pork mixture.

Fold in the sides of the husk to enclose the filling, then fold up the bottom

narrow flap of husk over the center and secure with a narrow strip of the

husk. Repeat until all the filling is used.

Depending on your instant pot, mine is a 6qt you will need to keep tamales short

to allow for room when placing lid on. I cut some of mine shorter on the open end if the

were too tall. I did get 30 tamales in the pot this time.

Pour the remaining 1 cup water or fresh broth into the Instant Pot and insert the steam

rack.

Arrange the tamales on the rack, standing them upright. I pile mine up with a string laid out

across a plate as I prepare the tamales then I tie them gently and lift all together to put in the Pot standing Up. BE SURE TO PUT WATER OR BROTH IN POT BEFORE PLACING TAMALES.

Lock the lid in place and turn the valve to Sealing.

Press the Manual/Pressure Cook button and set the cook time for 40 minutes at

high pressure.  Let the steam release naturally for about 10 minutes, then

turn the valve to Venting to release any residual steam.

Carefully remove the lid and transfer the tamales to a plate. Let stand for

15–30 minutes to set up before serving. Trust me, let them sit, as the dough needs time

to cool and firm up properly.
