Sticky Honey Chicken with Green Beans and Mushrooms

servings 4-6

What you Need:
1 ½ pounds chicken breasts
½ teaspoon salt & pepper each
3 tablespoons cornstarch
1 tablespoon vegetable oil or as needed
2 cups fresh or frozen green beans
1 cup sliced mushrooms
green onions for garnish

sauce
⅓ cup honey
1/4 to 1/2 cup chicken broth or water(start with less, add more as needed)
2 tablespoons soy sauce
2 teaspoons ginger grated
2 teaspoons cornstarch
1 teaspoon sriracha or to taste
5-6 cloves garlic minced


How to Make it:

Cut chicken breasts into bite-sized pieces, season with salt & pepper and toss with cornstarch.

Combine all sauce ingredients in a small bowl and set aside.

Heat oil in a large skillet over medium high heat. Add chicken in small batches and cook until no pink remains, about 5-6 minutes. Set chicken aside in a bowl.


Next add a little more oil heat and then add green beans and mushrooms, cook till just tender, season a bit more with pepper and touch of salt 

Add sauce to the pan and bring to a simmer. Simmer until it thickens how you like.

Stir in chicken and toss to coat. Garnish with green onions.

Notes:

Leftovers can be stored in an airtight container in the fridge for up to 4 days. 

Reheat leftovers in the microwave until heated through. 

Green Beans and Mushrooms

 


We always needs our vegetables right? I am always looking for new ideas to create good tasting recipes with them too. I like green beans and mushrooms and put together like this they are delicious.

Serves 6

What you Need:

1 tablespoon olive oil
1 tablespoon butter
3 large shallots, sliced thinly
8 ounces cremini or button mushrooms, sliced thinly
1/4 teaspoon salt
1 1/4 pounds green beans, stem ends trimmed (you can use frozen)
1/4 cup chicken, turkey, or vegetable broth


How to Make it:

Heat the oil and butter in a large skillet over medium heat, swirling it around to coat the pan. When the butter is fully melted and has stopped foaming, add the shallots, mushrooms, and salt. Sauté until all of their liquid has evaporated from the mushrooms and they are beginning to brown, about 10 minutes.

Add the green beans to the pan and stir to evenly distribute the shallots and mushrooms. Pour the broth over the vegetables and cover the pan. Let cook, covered, until almost tender, about 10 minutes. Turn off the heat and let stand, still covered, for another 5 minutes.

Serve the green beans in a serving dish or shallow bowl, pouring all of the mushrooms and shallots over the top.


RECIPE NOTES

Keep the green beans warm in a slow cooker or covered dish in a warm oven for up to one hour.

Flavor variations: Basic green beans are what's expected for the holidays, but for weeknights you can dress up this dish with other flavors. Add Italian seasonings to the mushrooms and shallots for an herbed version, or add sesame oil and soy sauce for an Asian twist.

Creamy Chicken Mushroom Florentine is ready in about 30 minutes! It is filled with sun dried tomatoes, green pepper, spinach, mushrooms and the creamiest pasta!


What you Need:

1 pound boneless skinless chicken breasts cut into one inch pieces
1 tablespoon butter
1 teaspoon olive oil
2 cloves garlic minced
1/4 cup sun dried tomatoes
1 small green pepper diced(optional)
4 ounce small mushrooms sliced
1 tablespoon flour
2 cups chicken broth
1 1/2 cup half and half
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
8 ounces linguine broken in half and cooked
1/4 cup grated parmesan cheese
2 cups fresh baby spinach
The sauce for the Pasta gets nice and thick serve over pasta

How to Make it:

Cook pasta as you are cooking the chicken to get it ready to mix in the end.

In a large skillet over medium high heat add the butter and cook the chicken until golden brown and no longer pink. Add the olive oil and cook the garlic, sun dried tomatoes, and mushrooms until tender. Add in the flour and cook for another minute.

Slowly add the chicken broth, half and half, salt, pepper, and garlic powder and whisk until incorporated. Add the cooked pasta and bring just to a simmer. 

Remove from the heat and add the parmesan cheese and spinach and stir until the spinach starts to wilt. Serve immediately.

What you need:

4 Italian Sausage cut into large chunks

4 medium potatoes diced 

1/2 onion(any will do, I used red tonight)

Mini sweet peppers, sliced thin

8 oz Mushrooms Sliced thick

3-4 cloves of garlic minced(we like lots of garlic)

season how you like(I use a little salt, Pepper, garlic, onion powder and Head Country)

For toppings, I used sliced tomatoes, fresh spinach, some cheese and sweet chili sauce(MILD)

How to Make it:

First chop, dice and slice your vegetables, cut sausage into chunks

Heat up a large skillet with about 4 tablespoons of oil till nice and hot

First add the potatoes as they take the longest to cook, then add the sausage

Cook for 7-10 minutes do not stir or flip until at least 5 minutes, to give it

time to crisp up. After 10 minutes 

Add vegetables in order of how quick they cook (I did onions, sliced peppers, cook about 3 minutes, then add garlic and mushrooms cook just till tender.

Now all should be crispy brown and delicious\

Turn off heat, quickly heat up pita pockets

Fill partially with the cooked mixture, top with fresh veggies(I used tomatoes and spinach, a little cheese), drizzle sweet chili sauce on and serve warm.

What you Need:

For the Topping: 

1 tablespoon olive oil 

2 tablespoons butter 

1 large clove garlic, crushed  

1 1/2 cups homemade breadcrumbs or 1 cup panko

A handful parsley, finely chopped 

4 ounces cheese, finely grated 

1/2 cup loosely packed freshly grated Parmigiano-Reggiano 

 

4 tablespoons butter

1/2 pound white mushrooms, sliced

2 large shallots, finely chopped 

2 ribs celery, finely chopped 

3 tablespoons flour 

1 1/2 cups whole milk or half-and-half 

Salt and white pepper    

2 cans tuna in water, about 6 ounces total, drained and flaked

1-2 cups frozen peas(or vegetable of your choice)

12 ounces extra wide egg noodles 

 

How to make it:

Preheat oven to 400°F. For the topping, heat olive oil over medium heat and melt in butter. Add garlic, swirl a minute to infuse garlic flavor, then remove. Add breadcrumbs and lightly toast. Cool breadcrumbs and toss in parsley and grated cheeses.   Bring large pot of water to a boil for the pasta.   Heat a large skillet over medium to medium-high heat. Melt butter; when it foams, add mushrooms and lightly brown. Add shallots and celery, and stir 5-7 minutes to soften.  Sprinkle in flour and stir a minute or so; whisk in sherry or wine, stock, milk or half-and-half, and season with salt and white pepper. Cook to thicken to coat back of spoon.    Salt water and cook noodles to al dente. Drain.   Add tuna to sauce and combine with noodles. Transfer to a casserole dish, top with cheese and breadcrumb mixture, and bake to brown and bubbly, 20 minutes

Salisbury Steak Meatballs with Mushrooms

Rich brown gravy (salisbury sauce) tender ground beef, mushrooms, onions diced small makes a delicious gravy, I like to serve this over mashed potatoes. It's a delicious favorite around here.

What you need:

2 tablespoons butter

1 cup onions diced

2 cups mushrooms sliced

Meatballs

1 ½ pounds ground beef

⅓ cup Italian breadcrumbs

⅓ cup milk

¼ cup parsley fresh, chopped

¼ cup parmesan shredded

salt and pepper to taste

Sauce

10 ounces beef broth

½ can water

1 tablespoon flour

2 tablespoons ketchup

1 ½ teaspoon dijon

1 tablespoon parsley fresh, chopped

½ teaspoon garlic powder▢2 teaspoons Worcestershire sauce


How to Make it:

In a large saucepan, saute onions in butter until transluscent, about 5 minutes. Add mushrooms and saute an additional 5 minutes.

In a medium bowl, mix the ingredients for the meatballs until just combined. Create approximately 24 meatballs (1 ½ tablespoons each). Place into the saucepan, with onions and mushrooms, to brown.

Meanwhile in a small mixing bowl, whisk together the ingredients for the sauce. Pour sauce over the meatballs.

Bring the pan to a boil then reduce heat and simmer uncovered for 10 minutes to reduce.

Place lid on the pan and simmer for an additional 20 minutes before serving. 

Serve over mashed potatoes for a delicious meal

To Make Tender Meatballs:

Do not over mix the meat mixture

Use a cookie scoop to ensure all meatballs are the same size

Ensure any add ins (like onions) are chopped small

A little bit of milk adds a lot of moisture and keeps the meatballs tender

Brown meatballs to add flavor and help them hold their shape

What you need:

1-2 strips bacon, cut into strips

1 tablespoons butter

16 ounces brown mushrooms, washed (pat dry with paper towle)

1 tablespoon olive oil

1/4 cup dry white wine (or chicken broth/stock)

6 cloves garlic finely chopped

1/2 cup heavy cream, (thickened cream or evaporated milk)

1 teaspoon fresh chopped parsley

1 teaspoon fresh chopped thyme

Salt and pepper to season

1/4 cup fresh shredded or grated mozzarella

1/4 cup fresh shredded or grated parmesan cheese

How to make it:

Fry the bacon in a large oven-safe skillet over medium heat until crispy. Use a slotted spoon to transfer to a paper towel lined plate to soak up some of the oil. Set aside.

In the same pan, melt the butter. Add the mushrooms, drizzle with oil and mix through, scraping up any browned bits from the bottom of the pan. Fry for 2-3 minutes to lightly brown mushrooms and release their juices (if any). 

Pour in the wine (or broth) and let reduce for 2 minutes, while occasionally stirring. 

(Preheat broiler or oven grill.)

Add in the garlic and stir it through for a minute, until fragrant. Pour in the cream and herbs. Reduce heat down to low. Gently simmer until tender (about 4-5 minutes) and sauce is slightly thickened. Season with salt and pepper.

Add the bacon back in and give everything a good mix to combine all of the flavours together. Top the mushrooms with the mozzarella and parmesan cheese.

Broil until cheese is melted and bubbly and mushrooms are done to your liking (about 3-5 minutes).

Serve warm.

Italian Sausage Spaghetti

 

This spaghetti has some good veggies, sauce, Italian Sausage and really good spices and herbs, over whole wheat spaghetti noodles. You can change the veggies if you like. Fresh and delicious Goes well with some Cheesy Italian bread.

Serves 3-4 people(use less amounts if you want less servings)

What you Need:

2-4 Italian Sausages(sliced about 1/2" slices)
1/2-1 onion diced
4-5 garlic cloves minced
1 zucchini diced
4-8 oz mushrooms quartered
1 28 oz can crushed tomatoes or tomato sauce
1tsp each garlic powder, onion powder, thyme, oregano, basil, pepper
dash of salt if you like
whole wheat pasta to serve as many as you need, (I use about a dimes size per person)

How to make it:

First dice or chop your ingredients, bring a large pot of water to boil for pasta

Heat a large pot with about 3-4 turns of the olive oil bottle, when hot toss in the onions and sauté 2 minutes, then add garlic cook another minute, add  your sausage and cook till no longer pink in centers, add zucchini and cook for about 4 minutes, then add mushrooms cook another 4 minutes. Now cook pasta Once everything is cooked, next add 1 can of crushed tomatoes and stir. Then add spices and stir in, bring up just till it starts to bubble then turn down heat to low simmer about 15 minutes but don't let it stick to bottom. 

Drain pasta and serve with sauce. Fresh and delicious

Stuffed Mushrooms are so good they get asked for often here, so here is my recipe for really good ones.

What you Need:

20 large mushrooms (scrubbed clean and stems separated)
1 tablespoon Olive oil
2 tablespoon Minced shallots or minced onion
1 Large garlic clove (minced)
Salt
3 tablespoon Chopped parsley
1 teaspoon dried thyme
2 tablespoon breadcrumbs
2 tablespoon Vegetable stock
2 tablespoon Olive oil
2 tablespoon Grated parmesan cheese
Any Shredded cheese you prefer for topping before baking

How to Make them:

Preheat oven to 375 degrees F.

Finely chop mushroom stems. Heat 1 tablespoon olive oil in a small frying pan over medium-high heat. Sauté the chopped mushroom stems and the shallots for 4-5 minutes, stirring often.

Add the garlic and almonds and sprinkle with salt. Stir well and sauté 2 more minutes. Turn off the heat and add the parsley, herbs and breadcrumbs.

Pour the vegetable stock into a food processor, then the rest of the stuffing. Pulse several times to get a fine mixture, almost a paste.

Fill each mushroom with the stuffing. Sprinkle grated parmesan and a little shredded cheese over each mushroom and bake for 20-25 minutes, or until the cheese browns a little. Allow to cool for 5 minutes or so before serving.

Bacon Wrapped Chicken with Mushrooms in a Cream Sauce

Delicious dinner, full of rick good flavors. Make it really special and throw in a variety of exotic mushrooms, shiitake, portabella, oyster, etc. It can be prepared in one skillet. Serve with a salad, over rice or pasta or along with potatoes if you like. 

What you need:

2 tablespoons butter or margarine, melted 
6 chicken thighs 
salt and pepper to taste 
6 slices bacon (thin sliced) 
2 tablespoons minced garlic, divided 
1 cup sliced fresh mushrooms 
1/4 cup dry white wine (optional) or broth 
1 cup heavy cream
1 tsp corn starch to thicken sauce

How to make it:

Season chicken with a little salt, remember the bacon is salty already. and pepper. Wrap chicken with bacon slices Melt butter in skillet, when skillet is nice and hot, place chicken in skillet and cook till no more red juices show or check temp of chicken reaches 165. 

Add mushrooms, garlic to pan and cook about 5 minutes or so t ill tender and turning brown.

Remove chicken and mushrooms to dish then Whisk in wine and heavy cream and corn starch till smooth, pour into skillet with the browned bits and butter and cook until warmed through on low so not to curdle cream, about 5  minutes. Stir chicken and mushrooms into sauce to coat, and serve.

What you need:

Patties:
 1 pound ground sirloin
 1/2 cup bread crumbs
 1 egg, beaten
 2 tablespoons milk
 1/2 (1 ounce) package dry onion soup mix
 1 teaspoon Worcestershire sauce
A dash of sweet chili sauce
 1/4 teaspoon ground black pepper
Gravy:
 3 tablespoons butter
 2 cups fresh mushrooms, sliced
 1 sweet onion, sliced
 3 tablespoons all-purpose flour
 1/2 (1 ounce) package dry onion soup mix
 1 1/2 cups beef stock
 1 cup water
 salt and ground black pepper to taste

How to make it:

Mix ground sirloin, panko bread crumbs, egg, milk, and 1/2 packet onion soup mix, Worcestershire sauce, and black pepper together in a large bowl; shape into 5 patties.

Heat a skillet over medium heat. Cook patties in hot skillet until browned, 3 to 5 minutes per side.

Melt butter in a separate skillet over medium-high heat. Saute mushrooms and onion in melted butter until tender, 5 to 7 minutes. Stir flour and remaining dry onion soup mix into the mushroom mixture; cook and stir until flour is integrated fully, about 1 minute. Stream beef stock and water over the mushroom mixture while stirring continually; bring to a simmer, reduce heat to medium, and cook, stirring frequently, until the liquid thickens, about 5 minutes. Season with salt and pepper.

Lie the browned steaks into the gravy; simmer until steaks are firm and light brown in the center, about 30 minutes. An instant-read thermometer inserted into the center should read 160 degrees F.

Garlic Parmesan Pasta with Mushroom and Spinach

Here is a vegetarian dish that is really creamy full of flavors of garlic, parmesan, Italian seasonings, red pepper flakes if you like them, and mushrooms and spinach. If you want you may add chicken or beef just cook it ahead and add in to the sauce with the rest and serve.

4 SERVINGS   

What you Need:

14 oz pasta(your choice)
3 tablespoons olive oil
2 medium onions, sliced
3 or 4 cloves garlic, minced
14 oz mushrooms, sliced
10 oz fresh spinach
1/2 cup low-sodium vegetable broth
Fresh cracked pepper, to taste
1 teaspoon Italian seasoning
1/2 cup parmesan cheese, grated
1/2 cup heavy whipping cream
1 teaspoon red chili pepper flakes, optional

How to make it:

To make the creamy parmesan spinach mushroom pasta skillet: Cook the pasta in salted water until al dente, according to the package instructions.

Heat 1 tablespoon olive oil in a large skillet. Add the onion and saute for 2-3 minutes until translucent and slightly browned. Remove from the skillet and transfer to a plate.

In the same skillet, add the mushrooms and sauté for about 3 minutes until browned. Add a bit of oil if necessary. Remove mushrooms to the plate with onion and set aside.

In the same skillet, add the spinach and cook for 2 minutes until just wilted. Adjust seasoning with salt and pepper. Remove spinach and drain excess water. Transfer to another plate.

Still in the same skillet, heat a little oil, add the chopped garlic and cook for about 30 seconds, then deglaze with vegetable broth. Add cream, grated parmesan, chili pepper flakes, and Italian seasoning and cook for 2 minutes, stirring until combined and the cream gets some color.

Once the pasta is ready, add mushrooms, onion, and spinach back to the skillet, then put drained pasta and toss to combine. Add more parmesan and Italian seasoning and give a quick stir. Serve the creamy parmesan spinach mushroom pasta with red chili pepper flakes and more parmesan, if you like. Enjoy!

Ravioli in Mushroom Cream Sauce with Meatballs



This dreamy creamy sauce made with real cream, butter and mushroom's makes this Ravioli so delicious and there are a few different ways to make it, using different raviolis and with or without meatballs.

Ingredients

18 ounces ravioli(mushroom if you can find it)
8 ounces mushrooms - sliced(any kind you prefer)
3 whole garlic cloves - peeled OR 1 tablespoon minced garlic
3 tablespoons butter
2 cups low sodium chicken or vegetable broth
1 cup heavy cream
1 teaspoon Italian herb blend seasoning - or Herbs of your liking
½-1 teaspoon salt - to taste
1/2 teaspoon freshly cracked black pepper - reduce to 1/4 teaspoon if using ground black pepper
1lb of meatballs(optional)

How to make it:

Fill a large pot with 4 inches of water, bring to a boil. Add ravioli and boil for 3 minutes, then drain and blanch the ravioli by running cold water over it immediately. Optional: Toss ravioli in 1 teaspoon olive oil o keep it from sticking together.

In a large skillet combine butter, garlic, and mushrooms and sauté over medium-high heat for 3-4 minutes until mushrooms are tender and garlic is fragrant.

Stir in broth, bring to a simmer, then stir in heavy cream. Simmer till reduced by half and creamy (about 5-7 minutes).

Stir in dried herbs, salt, and pepper. Taste, add more salt and pepper if needed.

Gently stir in ravioli.

If desired, garnish with freshly grated parmesan cheese, parsley or thyme, and cracked black pepper before serving.

Notes

You can substitute the ravioli with any favorite - sausage, cheese, spinach etc.

Did you know there are different types of ravioli you can find in some stores
or  make your own.
