Creamy Italian Sausage and Potato Soup

This is a easy soup, so creamy and full of flavor and so good. It really doesn't take long at all.

Serves 6

INGREDIENTS
1 pound mild Italian sausage
1 small onion diced
3-4 cloves garlic minced
2 pounds Russet potatoes, diced slightly cooked first
6 cups low-sodium chicken stock
3 cups chopped kale or spinach
1 cup heavy cream
½ cup parmesan cheese, shredded
Kosher salt and black pepper, to taste
Olive oil, for garnish

How to Make it:

Brown and crumble Italian sausage in a large stock pot or Dutch oven over medium-high heat. Remove sausage with a slotted spoon from pot. Next cook your onions and garlic till slightly golden. Then you can drain the oil if there is a lot or you want, if there isn't much I leave it for flavor.

Return sausage to pot and add potatoes, chicken stock, ½ teaspoon salt, and ¼ teaspoon black pepper. Bring to a boil and reduce heat to medium. Cook until potatoes are tender, about 10-12 minutes.

Use a slotted spoon to remove ½ of potatoes from pot. In a separate bowl, mash potatoes then return them to the pot. Stir in kale or spinach leaves, heavy cream, and more salt and pepper, to taste. Cook until kale is tender, about 2-3 minutes.

To serve, garnish with shredded parmesan cheese, freshly cracked black pepper, and a drizzle of olive oil.

INGREDIENTS

 

For the Meat Sauce

1 pound ground beef

1 pound ground Italian sausage

1 onion, diced

1 teaspoon garlic powder

1 teaspoon slap ya mama

1 teaspoon black pepper

½ teaspoon red pepper flakes

(2) 15 ounce cans tomato sauce

12 ounce can tomato paste

1 teaspoon oregano

1 teaspoon basil


For the Creamy White Sauce

½ cup butter

1 tablespoon flour

16 ounce heavy cream

6 ounce shredded Parmesan cheese

Salt and pepper, to taste

½ cup pasta water

16 ounce box Rotini pasta(any pasta will work)

2 cups mozzarella cheese, shredded


How to Make it:

Preheat oven to 350° and spray a 9 x 13 baking dish with non-stick cooking spray. Set aside.

Bring a large pot of water to a boil and cook pasta per package directions for al dente. Reserve ½ cup of pasta water, then drain pasta and set aside.

In a large skillet or frying pan, over medium high heat, cook ground beef, Italian sausage and onions until meat is not longer pink and onions are tender. Drain and return to pan.

Sprinkle with seasonings, stir.

Pour tomato sauce and tomato paste into the meat mixture. Stir to combine, cover and let simmer, stirring occasionally.

In a medium saucepan, over medium heat, melt butter and then stir in flour.

Pour heavy whipping cream and stir until combine.

Add Parmesan cheese, stir until melted and add salt and pepper.

Add pasta water to cheese sauce, stir.

Add cooked pasta to cheese sauce, stir to combine.

Pour pasta and cheese sauce into prepared baking dish followed by ground beef mixture on top.

Sprinkle with shredded cheese and bake uncovered for 20 minutes or until the cheese is hot and bubbly.

Serve with a side salad and garlic bread.

Italian Sausage Spaghetti

 

This spaghetti has some good veggies, sauce, Italian Sausage and really good spices and herbs, over whole wheat spaghetti noodles. You can change the veggies if you like. Fresh and delicious Goes well with some Cheesy Italian bread.

Serves 3-4 people(use less amounts if you want less servings)

What you Need:

2-4 Italian Sausages(sliced about 1/2" slices)
1/2-1 onion diced
4-5 garlic cloves minced
1 zucchini diced
4-8 oz mushrooms quartered
1 28 oz can crushed tomatoes or tomato sauce
1tsp each garlic powder, onion powder, thyme, oregano, basil, pepper
dash of salt if you like
whole wheat pasta to serve as many as you need, (I use about a dimes size per person)

How to make it:

First dice or chop your ingredients, bring a large pot of water to boil for pasta

Heat a large pot with about 3-4 turns of the olive oil bottle, when hot toss in the onions and sauté 2 minutes, then add garlic cook another minute, add  your sausage and cook till no longer pink in centers, add zucchini and cook for about 4 minutes, then add mushrooms cook another 4 minutes. Now cook pasta Once everything is cooked, next add 1 can of crushed tomatoes and stir. Then add spices and stir in, bring up just till it starts to bubble then turn down heat to low simmer about 15 minutes but don't let it stick to bottom. 

Drain pasta and serve with sauce. Fresh and delicious

Sausage and Peppers, Onions, Potatoes One Pan Meal


One Pan Meals save time, have lots of flavor and are so easy



These easy sausage and peppers are a simple, low carb, and flavorful meal that is perfect one pan meal. You can pile these in a bun if you like or eat as is, good either way you want. Best of all you can cook this in an Air Fry Oven or the regular Oven.



What you Need:


2 tablespoons olive oil
1 pound Italian sausage links
1 cup water
2 tablespoons butter
2 large bell peppers green, red, or orange, sliced lengthwise
1 onion sliced lengthwise
½ teaspoon Italian seasoning
2 cloves garlic
⅓ cup white wine or beer or broth
4 potatoes washed and diced or sliced (optional)
14 ½ ounces diced tomatoes optional (canned)
Salt, pepper, garlic powder, onion powder, herbs you like to taste.


How to cook it:

Slice up veggies in chunks, or large slices, thick cut, place in bowl or bag, and drizzle olive oil and shake, season with seasonings for flavor. 

I place all the veggies on a foil covered cookie sheet or large baking pan, then i SPRAY or Drizzle olive oil over all, place sausage on top of veggies. Set your air fry oven to 400 degrees. Follow your oven instructions. My oven is a large regular oven with an air fryer built in. It's the best thing ever.

Cook about 20 minutes till meat is cook well. veggies will be tender


For cooking in a regular oven follow these instructions:

Slice up veggies in chunks, or large slices, thick cut, place in bowl or bag, and drizzle olive oil and shake, season with seasonings for flavor. 

On top of veggies place sausages.

Heat oven to 400 degrees, when hot place pan in oven, bake for about 20-30 minutes depending on your oven.


For cooking in a skillet follow these instructions.

Heat olive oil over medium heat. Brown sausages on all sides. Add water, cover and simmer 10-12 minutes.

Remove lid, remove sausages and set aside. Discard any remaining water. 

Add 2 tablespoons butter, Italian seasoning and onions to the pan. Cook 3-5 minutes stirring until onions are slightly softened. Add peppers and cook 2 minutes.

Add garlic, wine, tomatoes if using and sausage. Cook 3-4 minutes or until peppers are tender and sausages reach 160°F*. 

I season mine with above seasonings as I cook.


Top with a sprinkle of fresh herbs (basil/parsley) if desired.


Recipe Notes

*Uncooked sausages that contain ground beef, pork, lamb or veal should be cooked to 160 °F. Uncooked sausages that contain ground turkey and chicken should be cooked to 165 °F
