Meatball Soup-with Pasta

 

Soup is healthy and hearty, gets the body soothed and boosted for better health, warmer in cold weather, yet makes us happy anytime.

What you Need:

2 tablespoons olive oil

1 medium onion chopped

3-4 garlic cloves minced(I add more because we love garlic)

2 large carrots peeled and chopped

3 stalks celery chopped

1 green pepper diced(seeds removed)

1 1/2 cups green beans trimmed and cut in one inch segments

1 1/2 teaspoon dried parsley

1 teaspoon dried oregano

1/2 teaspoon dried basil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1.2 teaspoon black pepper(I also add peppercorns from the grinder)

6 cups low sodium beef broth

1 can (8 ounce) tomato sauce

1 can (14.5 ounce) fire roasted tomatoes

1 1/4 lbs fresh or frozen meatballs

3/4 cup Small pasta (any kind)

fresh parsley, chopped

salt and pepper to taste

 


How to make it:

In a large heavy stockpot heat olive oil over medium heat.  Add the chopped onion, carrots, celery, garlic, green bell pepper and green beans.  Cook for 7-8 minutes or until slightly soft and fragrant. Add parsley, oregano, basil, garlic powder and onion powder.  Cook for 2 minutes; stirring constantly.

Pour in beef broth, tomato sauce, fire roasted tomatoes and meatballs; simmer for 7-10 minutes.  Add the pasta and cook for an additional 10 minutes.  Garnish with chopped fresh parsley, season with salt and pepper to taste, and serve promptly.

NOTES

You can use fresh or frozen turkey, beef, pork or chicken meatballs.  They all taste good in the soup.

You can use fresh vegetables or frozen vegetables.

Canned fire roasted tomatoes are tomatoes charred over an open flame before they are diced and canned.  They can be found at your local grocery store with the other canned tomatoes.

If you are going to freeze or store any of this soup for later consumption remove the portion that you are going to save for a later date before adding the pasta.  Hold back a proportionate amount of pasta and add it at the time that you reheat the soup.

Any small pasta will work like Mini Farfalle, ditalini, acini de pepe or orzo.

For added flavor add 1-2 tablespoons of freshly grated Parmesan Cheese. I also top bowls with green chives or diced green onions and Parmesan Cheese.

Crockpot Meatballs with Grape Jelly Sauce

Sweet and savory meatballs and they are super easy to make, oh so good, you will get asked to bring these often.

What you Need:

1 (32 ounce) bag frozen fully-cooked meatballs (see notes to make meatballs from scratch)
12 ounces chili sauce
10 ounces grape jelly


How to make it:

To sauce the meatballs in a slow cooker:

Add frozen meatballs to crockpot. Add chili sauce and grape jelly. Cover and cook for up to 2 hours on HIGH or 4 to 6 hours on LOW, until the sauce is hot. Serve directly from the crockpot with a serving spoon or toothpicks, or transfer to a serving dish.


To sauce the meatballs on the stovetop:

Add meatballs to saucepan. Add chili sauce and grape jelly. Cover and simmer over medium heat until the sauce is hot, about 10 minutes.

Salisbury Steak Meatballs with Mushrooms

Rich brown gravy (salisbury sauce) tender ground beef, mushrooms, onions diced small makes a delicious gravy, I like to serve this over mashed potatoes. It's a delicious favorite around here.

What you need:

2 tablespoons butter

1 cup onions diced

2 cups mushrooms sliced

Meatballs

1 ½ pounds ground beef

⅓ cup Italian breadcrumbs

⅓ cup milk

¼ cup parsley fresh, chopped

¼ cup parmesan shredded

salt and pepper to taste

Sauce

10 ounces beef broth

½ can water

1 tablespoon flour

2 tablespoons ketchup

1 ½ teaspoon dijon

1 tablespoon parsley fresh, chopped

½ teaspoon garlic powder▢2 teaspoons Worcestershire sauce


How to Make it:

In a large saucepan, saute onions in butter until transluscent, about 5 minutes. Add mushrooms and saute an additional 5 minutes.

In a medium bowl, mix the ingredients for the meatballs until just combined. Create approximately 24 meatballs (1 ½ tablespoons each). Place into the saucepan, with onions and mushrooms, to brown.

Meanwhile in a small mixing bowl, whisk together the ingredients for the sauce. Pour sauce over the meatballs.

Bring the pan to a boil then reduce heat and simmer uncovered for 10 minutes to reduce.

Place lid on the pan and simmer for an additional 20 minutes before serving. 

Serve over mashed potatoes for a delicious meal

To Make Tender Meatballs:

Do not over mix the meat mixture

Use a cookie scoop to ensure all meatballs are the same size

Ensure any add ins (like onions) are chopped small

A little bit of milk adds a lot of moisture and keeps the meatballs tender

Brown meatballs to add flavor and help them hold their shape

I have to say how much I love casseroles, they are warm and comfort foods in a dish. They can be made at home and served any day of the week, they travel well and show how much you care for others by taking them to someone else's house. It's a great way to express your feelings and share a warm cozy caring meal with others.

What you need: Italian Meatballs, thawed or homemade and precooked 4 large russet potatoes 1 quart whipping cream 2 cups shredded cheese (can reserve 1/2 cup for topping) 2 tablespoons butter 1 teaspoon granulated onion 3 sprigs teaspoon fresh parsley 1 teaspoon salt 1 teaspoon pepper

How to make it: Preheat oven to 375ºF. Grease a 9x13 inch baking dish and set aside. Thinly slice meatballs. Set aside. Peel potatoes and slice into 1/4 inch slices. Mix together with meatballs in the waiting baking dish. Add whipping cream, shredded cheese, butter, granulated onion, parsley, salt and pepper to the meatball and potatoes, slightly stirring to distribute ingredients. Place in oven for 50 minutes, or until potatoes are fork tender. Optional: last 15 minutes sprinkle 1/2 cup or more shredded cheese on top and finish baking. Remove from oven and serve
