What you Need:

1.5 Pound Beef Roast cut into 1 inch pieces
1 Tbsp Butter
1/2 Onion diced
4-5 garlic cloves minced
3 cups beef broth
2 Bay Leaves
1/2 tsp Dried Thyme Leaves or 2 tsp fresh
1/2 tsp Salt
1 tsp Pepper
1 Tbsp Cornstarch
1/4 cup Cold Water
12 oz Extra Wide Egg Noodles


How to Make it:

Heat a large skillet over medium heat.  Add in the butter and onion, and sauté until the onion is translucent (3-4 minutes). Next add garlic cook another 3 minutes.

Add in the beef and brown the beef in the skillet with the onions (8-10 minutes) over medium heat.

Then pour 2 cups of the beef broth into the skillet and add in the seasoning.  Stir to combine and bring the mixture to a boil.  Reduce the heat, cover and simmer for 20-30 minutes until the beef is tender. Watch closely and slowly add in the last cup of the beef broth as the broth starts to cook off.

Mix the cornstarch into the ¼ cup cold water in a separate bowl.  Stir this mixture into the skillet mixture and allow this to cook for 10 minutes or until the sauce has thickened.

While the sauce is thickening, cook the egg noodles in a separate pot based on the package instructions.

Serve the beef mixture over the egg noodles and enjoy!

Sausage and Peppers, Onions, Potatoes One Pan Meal


One Pan Meals save time, have lots of flavor and are so easy



These easy sausage and peppers are a simple, low carb, and flavorful meal that is perfect one pan meal. You can pile these in a bun if you like or eat as is, good either way you want. Best of all you can cook this in an Air Fry Oven or the regular Oven.



What you Need:


2 tablespoons olive oil
1 pound Italian sausage links
1 cup water
2 tablespoons butter
2 large bell peppers green, red, or orange, sliced lengthwise
1 onion sliced lengthwise
½ teaspoon Italian seasoning
2 cloves garlic
⅓ cup white wine or beer or broth
4 potatoes washed and diced or sliced (optional)
14 ½ ounces diced tomatoes optional (canned)
Salt, pepper, garlic powder, onion powder, herbs you like to taste.


How to cook it:

Slice up veggies in chunks, or large slices, thick cut, place in bowl or bag, and drizzle olive oil and shake, season with seasonings for flavor. 

I place all the veggies on a foil covered cookie sheet or large baking pan, then i SPRAY or Drizzle olive oil over all, place sausage on top of veggies. Set your air fry oven to 400 degrees. Follow your oven instructions. My oven is a large regular oven with an air fryer built in. It's the best thing ever.

Cook about 20 minutes till meat is cook well. veggies will be tender


For cooking in a regular oven follow these instructions:

Slice up veggies in chunks, or large slices, thick cut, place in bowl or bag, and drizzle olive oil and shake, season with seasonings for flavor. 

On top of veggies place sausages.

Heat oven to 400 degrees, when hot place pan in oven, bake for about 20-30 minutes depending on your oven.


For cooking in a skillet follow these instructions.

Heat olive oil over medium heat. Brown sausages on all sides. Add water, cover and simmer 10-12 minutes.

Remove lid, remove sausages and set aside. Discard any remaining water. 

Add 2 tablespoons butter, Italian seasoning and onions to the pan. Cook 3-5 minutes stirring until onions are slightly softened. Add peppers and cook 2 minutes.

Add garlic, wine, tomatoes if using and sausage. Cook 3-4 minutes or until peppers are tender and sausages reach 160°F*. 

I season mine with above seasonings as I cook.


Top with a sprinkle of fresh herbs (basil/parsley) if desired.


Recipe Notes

*Uncooked sausages that contain ground beef, pork, lamb or veal should be cooked to 160 °F. Uncooked sausages that contain ground turkey and chicken should be cooked to 165 °F

Frito Pie in a Bowl



This is so easy and oh so good, the kids will like and so will grandma. Best of all it's easy and quick to make. You can top it how you like


What you need:
1 lb. lean ground beef
1/2 diced onion
2 cloves garlic minced
1 can (16 oz) chili beans
1 can (8 oz) tomato sauce
1 can (15 oz) diced tomatoes
1 envelope low sodium taco seasoning
1 cup shredded cheddar cheese
3 1/2 cups corn chips (Fritos)
1 1/4 cup fat free sour cream 
toppings: diced onions, extra tomatoes, avocados, green onions


How to make it:

Cook ground beef until meat is browned, add onions and garlic and cook till done, drain. Stir in beans, tomato sauce, diced tomatoes, taco seasoning mix and 1/4 c. of cheese. In a bowl I place a few Fritos first and then, top with your cooked meat mixture and top with more Fritos. Spread sour cream over this. Top with your favorite toppings how you like and enjoy.

Instant Pot Meatloaf & Mashed Potatoes


Delicious Meatloaf and Potatoes all in your Instant Pot, amazing, easy peazy too
Serves 3-4

Ingredients for Meatloaf
2 pounds ground beef
1 egg
1 cup Italian breadcrumbs
1/3 cup ketchup or BBQ sauce
splash of Worcestershire
2 tablespoons minced garlic, fresh
2 tablespoons dried minced onion or 1/2 cup finely minced onion
2 teaspoons dried parsley
extra ketchup or BBQ sauce for topping, if desired

Ingredients for Potatoes
2 lbs. potatoes, chopped (I used Yukon Gold potatoes with skins left on)
1/2 cup half and half cream
1/2 cup or more chicken broth
2 tablespoons butter
Salt & Pepper to taste

Directions:
Mix ingredients for meatloaf in a large bowl.
Transfer to a disposable foil loaf pan or make your own loaf shaped pan out of tin foil.
Cut potatoes into smaller pieces and place at the bottom of Instant Pot. Arranged them in an even layer. Add 1 cup broth or water over potatoes.
Place the rack that comes with your Instant Pot over potatoes and set the meatloaf on top. (I had to squish the pan a little for it to fit, but that’s fine.) The rack will make it easy for you to take loaf out when it’s done.
Secure lid and set at Manual (high pressure) cook time to 25 minutes. Make sure steam release is closed.
When finished, do a quick release on the pressure.
Top with a little additional ketchup and place under the oven’s broiler for a few minutes to caramelize. (Optional, but yummy step!)
Meanwhile to make potatoes, mash them in the Instant Pot with half & half, broth, butter, salt, and pepper until creamy.

This version has cheese added in the meatloaf
