This bread is full of flavor, bananas, pineapple, coconut, a touch of cinnamon and oh so heavenly. So good for you. Easy to make and makes people happy.

Ingredients

3 cups all-purpose flour

2 cups sugar

1 tsp salt

1 tsp cinnamon

1 teaspoon baking soda

1 teaspoon ground cinnamon

3 large eggs, room temperature

1-1/4 cups canola oil

2 teaspoons vanilla extract

1 can (8 ounces) crushed pineapple, drained

2 cups mashed ripe bananas (4 to 5 medium)

1/4 cup coconut

Chopped walnuts, optional

Directions

Preheat oven to 350°. In a large bowl, combine flour, sugar, salt, baking soda and cinnamon. In another bowl, whisk eggs, oil and vanilla; add pineapple and bananas. Stir into dry ingredients just until moistened. If desired, stir in walnuts. Pour into 2 greased 9x5-in. loaf pans.

Bake until a toothpick comes out clean, 60-65 minutes. Cool 10 minutes before removing from pans to wire racks.

1 piece: 193 calories, 9g fat (1g saturated fat), 17mg cholesterol, 120mg sodium, 26g carbohydrate (15g sugars, 1g fiber), 2g protein.

Old fashioned Banana Cream Pie


Just like Grandma's because she taught me how to make this recipe

For the little extra time to make this you'll never go back to instant pudding and pie fillings again.

Servings:8

What you Need:

1 (9 inch) pie crusts, baked (use Deep Dish prefered)

3 cups whole milk

3/4 cup white sugar

1/3 cup all-purpose flour

1/4 teaspoon salt

3 egg yolks, slightly beaten

2 tablespoons butter

1 teaspoon vanilla

3-4 bananas


How to Make it:

Have baked 9-inch deep dish pie shell ready.

In a large saucepan, scald the milk.

In another saucepan, combine the sugar, flour and salt; gradually stir in the scalded milk.

Over medium heat, stirring constantly, cook until thickened.

Cover and, stirring occasionally, cook for two minutes longer.

In a small bowl, have the 3 egg yolks, slightly beaten, ready; stir a small amount of the hot mixture into beaten yolks; when thoroughly combined, stir yolks into hot mixture.

Cook for one minute longer, stirring constantly.

Remove from heat and blend in the butter and vanilla.

Let sit until lukewarm.

When ready to pour, slice bananas and scatter in pie shell; pour warm mixture over bananas.


Fresh homemade Whipped Cream:

Make sure to use a steel or glass bowl, no plastic

2 cups COLD heavy whipping cream

1/4 cup+1 tbsp powdered sugar

1 tsp vanilla

Whip cream until almost whipped.  Add in sugar and vanilla and continue whipping until it is whipped cream!  I used a piping bag and 1m tip to pipe mine on, but feel free to just spread it over the top of the pie.  

Refrigerate for at least 2 hours!!!

MAKES: 2 small loaves or 1 large

What you need:

  1-1/2 cups all-purpose flour
  1/2 cup sugar
        1/2 cup brown sugar
  1 teaspoon ground cinnamon
  1/2 teaspoon baking powder
  1/2 teaspoon baking soda
  1/2 teaspoon salt
  1 egg
  1 cup mashed ripe bananas
  1/2 cup canola oil
  1/2 teaspoon banana extract
  1/2 teaspoon vanilla extract
  1 cup shredded zucchini
  1/2 cup chopped walnuts

How to make it:

In a large bowl, combine the first six ingredients. In a small bowl, beat the egg, bananas, oil and extracts. Stir into dry ingredients just until moistened. Fold in zucchini and walnuts.

Transfer to three 5-3/4-in. x 3-in. x 2-in. loaf pans coated with cooking spray. Bake at 325° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Yield: 3 mini loaves (6 slices each).

BANANA PUDDING DESSERT



This Banana Pudding is a no-cook pudding recipe made with sweetened condensed milk, cream cheese and pudding, fresh bananas and Nilla wafers!


What you need:
1 (8 oz) block cream cheese, softened to room temp.
1 (14 oz) can sweetened condensed milk
1 (5 oz) package Instant vanilla pudding mix, larger box
3 cups milk
2 tsp vanilla extract
1 (8 oz) tub whipped topping (COOL WHIP), thawed
1 (11 oz) box Nilla wafers
5-7 bananas, peeled and sliced

How to make it:

In a large bowl, beat the cream cheese with an electric mixer on medium speed until smooth and fluffy.

Add in sweetened condensed milk, pudding mix, milk and vanilla extract.

Mix until combined well.

Finally, stir in half of the whipped topping.

To layer: place one-third of the vanilla wafers in a layer on the bottom of a trifle dish, large bowl or a 9x13 baking dish.

Add a layer of bananas.

Then pour one-third of the pudding mixture on top (enough to cover all the bananas).

Continue with two more layers.

Top with remaining whipped topping.

Cover with plastic wrap and refrigerate for at least one to two hours before serving so it can thicken up and the wafers can soften.


Tip:

To keep the bananas from turning brown too quickly, you can sprinkle a little citric acid powder onto the sliced bananas. Just a little so as not to change the flavor. Or, you could lightly coat the sliced bananas in lemon or orange juice. Again, just coat lightly so as not to change the flavor.

Banana Cream Pudding flavor can be substituted for the vanilla pudding. Alternatively, banana extract can be substituted for the vanilla extract.

Hummingbird Cake

 


Delicious traditional moist cake with plenty of flavor melts in your mouth, a divine dessert.

what you need:
3 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 eggs -- beaten
1 1/2 cups vegetable oil
1 1/2 teaspoons vanilla extract
1 8 oz can crushed pineapple -- NOT drained
2 cups pecans OR walnuts -- chopped
2 cups bananas -- chopped

CREAM CHEESE FROSTING
1 8 oz pkg cream cheese -- softened 
1/2 cup butter or margarine -- softened
1 16 oz pkg powdered sugar
1 teaspoon vanilla extract

Combine dry ingredients in large bowl. Add beaten eggs and oil, stirring until all
Ingredients are moist. DO NOT BEAT! 
Stir in vanilla, pineapple, 1 cup chopped nuts and the bananas. 
Spoon batter into 3 well greased and floured cake pans. 

Bake at 350 for 20-30 mins or till tests done. 
Cool in pans 10 mins. Remove and cool completely on rack.
Spread frosting over and sprinkle remaining nuts on top.

CREAM CHEESE FROSTING 

Combine cream cheese and butter and cream until smooth. 
Add sugar, beat until light and fluffy then stir in vanilla.

Banana Pudding Cheesecake Pie




Combine three great flavors and what do you get? This dessert Mmm good This recipe makes 2 pies

INGREDIENTS
2 blocks (16 oz.) cream cheese, softened
3/4 c. sugar
2 c. heavy cream
1 tsp. pure vanilla extract
1 package instant vanilla pudding mix
1 3/4 c. whole milk
2 prepared graham cracker crust
3 bananas, sliced, plus more slices for garnish
30 Nilla Wafers, plus more for garnish
Whipped cream or Cool Whip, for serving

DIRECTIONS

You will make 2 pies or sometimes I do 1 pie and 1 dessert dish or serving dishes depending on who's eating it, small kids like their own dishes, so I will use cute bowls or cups even for individual servings, I mix up graham cracker crumbs, a touch of sugar and sprinkle in the bottom of the cups or a dessert serving dish.


How to make it:

Make cheesecake filling: In a large bowl using a hand mixer or in a stand mixer fitted with the whisk attachment, beat cream cheese until fluffy and no clumps remain.

Add sugar and beat until combined. Add heavy cream and vanilla and beat until stiff peaks form. Set aside.

In a medium bowl, whisk together pudding mix and milk. Let pudding stand for 3 minutes in the fridge until thickened. Fold into cheesecake mixture until combined.

Pour half the filling into graham cracker crust. Add a single layer of sliced bananas and Nilla Wafers (23 total), then pour over remaining half of mixture. Smooth top and garnish with crushed Nillas.

Refrigerate until cheesecake is firm, at least 6 hours and up to overnight. (If the cheesecake stills feels too soft to slice, transfer to the freeze for up to 1 hour.)

Optional Before serving, top with dollops of whipped cream or Cool Whip around the border of the cheesecake. Top each dollop with a banana slice and Nilla wafer, then garnish the whole cheesecake with more Nilla Wafers.
